Phamish is a stylish Vietnamese local that's always packed, despite being off the beaten track. Well-coiffed East-Sydney locals dress in their casual best as they order at the register, take a number and wait in anticipation. The ambience is best in summer, when the windows are wide open and gentle breezes coax out great smells from the open kitchen. Heat lamps come out for alfresco diners during the colder seasons. Dishes often sell out, so late-night diners shouldn't dilly-dally too long. Lines are a de facto existence at this no-booking hotspot, so do as the regulars do: divulge your mobile number, then head down the hill for drinks at the East Village Pub.
